WHere is a simplified take on a cocktail from the seasonal cocktail list. This is a party-sized premix which is bursting full of tastes of a Christmas time, rendering it ideal for a festive gathering. Save the extra cordial for morning drinks, sweets, or to make additional servings of this cocktail.

Ingredients for the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Cocktail (yields 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Directions
To prepare the Citrus Syrup: Combine every ingredients inside a pot, heat until it reaches a gentle boil, mixing so the sugar melts. Next, remove from the burner allowing it to reach room temperature fully. Decant into a sterilised bottle, cap it keeping it in the fridge, it will last for about a month.
To make Batch Mix: Pour all the liquids in a sizeable container, allow it to infuse for an hour, then strain , ideally through muslin, to ensure it's completely strained.
When ready to serve: Measure 85ml of your batch mix into a mixing glass packed with ice, gently stirring carefully for about 60 seconds until cold. Strain into an cold coupe glass or a similar vessel, garnish with the cranberries adding the final touch with a brief mist of mandarin oil over the drink.
